Do you offer coffee subscription services for beans delivered to my door?

Yes, we offer coffee shipped or delivered directly to your home via our bean subscription program!

 

Do you brew with smart coffee machines/espresso machines at your cafe?

Yes, we use Decent Espresso Machines in our Tacoma cafe that are semi-automated smart coffee machines providing the utmost attention to perfecting cup quality.

 

Do you follow the latest coffee shop trends?

Yes, we stay up-to-date on all the latest innovation in the specialty coffee industry. This includes brewers, grinders, drink trends, green coffee buying strategy, and using technology to help elevate the process.

 

What kind of coffee do you specialize in?

Naomi Joe Coffee is a coffee roaster that specializes in light roasts, ultra light roasts, and experimental processed coffees including cofermented coffee. Co-ferment coffees are currently one of our most popular options amongst our customer base in the South Sound area.

Yes, we serve Soul Chai out of the Pacific Northwest who offers an incredible chai blend. It is spicy and sweet and smooth and in our opinion, the BEST chai around!

 

Do you serve matcha tea and matcha latte?

Yes, we serve Mizuba Tea Co. matcha which is a high-quality tea which produces incredible sweetness, florals, and freshness in every cup. We can make this into a delicious matcha latte, iced matcha, or even add some lavender and oat milk to make it a special treat!

 

Do you sell Breville, Lelit, and Baratza products?

Yes, we sell Breville, Lelit, and Baratza products including the popular espresso combo Breville Bambino and Baratza Encore ESP, or the Lelit Bianca.

 

Do you sell Acaia products?

Naomi Joe's Guide to Perfect Espresso at Home

To pull the perfect shot of espresso at home, follow these steps to ensure consistency, flavor, and texture:

1. Choose Fresh, Quality Coffee Beans

  • Use freshly roasted beans (ideally within 2-3 weeks of roasting) for the best flavor. Aim for a medium to dark roast for espresso, though you can experiment with lighter roasts if you like more acidity.

2. Grind the Beans Properly

  • Use a burr grinder for uniform particle size. Espresso requires a fine grind, resembling table salt. The grind size significantly impacts the shot; too fine will slow extraction, too coarse will make it watery.
  • The optimal dose is typically 18-20 grams of coffee.

3. Preheat Your Espresso Machine

  • Let your machine warm up fully, including the portafilter, which ensures even temperature. Pull a blank shot (with no coffee) to warm the group head and ensure proper extraction.

4. Weigh and Tamp the Coffee

  • Weigh out your coffee dose. Distribute the grounds evenly in the portafilter, then tamp with consistent, firm pressure (about 30 pounds of force). The tamp should create a flat, even surface to ensure water flows through evenly.

5. Dial in the Shot

  • Extraction time is key! Start with a ratio of 1:2 (e.g., 18 grams of coffee to produce 36 grams of liquid espresso) and aim for an extraction time of 25-30 seconds.
    • If the shot pulls too fast (under 20 seconds), your grind is too coarse or your tamp is too light.
    • If it takes too long (over 35 seconds), the grind may be too fine, or the coffee could be over-tamped.

6. Monitor Temperature

  • Ideal brew temperature for espresso is around 195-205°F. Most machines adjust this automatically, but make sure your water is neither too hot (burnt taste) nor too cold (under-extracted).

7. Observe the Shot

  • Watch for a rich, golden-brown crema forming on top. The shot should flow smoothly, resembling warm honey as it pours into your cup.

8. Taste and Adjust

  • Taste is crucial. Adjust grind size, dose, or extraction time based on your preferences. If it's too bitter, try a coarser grind or shorter extraction time. If too sour, grind finer or extend the time.

9. Clean the Machine

  • After each shot, clean your portafilter, group head, and steam wand. Keeping your equipment clean is essential for long-term performance and flavor.
