El Mirador's Tabi coffee, from the lush hills of Huila, Colombia, is a masterpiece of innovation and tradition, cultivated by the Guzman family, who bring over 70 years of coffee expertise. The Tabi variety, developed by CENICAFE, is a cross between Tipyca, Bourbon, and Hibrido de Timor, designed to provide a rust-resistant alternative for certain regions. This lot undergoes the meticulous Thermal Shock process, designed to enhance sweetness, balance, and acidity. The coffee is first fermented anaerobically for 60 hours in tanks before moving to larger tanks for controlled oxidation. During this stage, water heated to 35˚C-40˚C is added to maintain a stable temperature throughout the coffee mass for another 60 hours. The fermentation is then halted with an 8-hour cold shock, locking in unique sensory attributes.
Drying is equally precise, with the coffee placed on raised beds in a dark, controlled environment. Humidity is managed using dehumidifiers, fans, and extractors, ensuring a consistent drying time of 12-15 days. This meticulous process minimizes fermentation, allowing the variety’s terroir and genetics to shine. The result is a vibrant cup with tasting notes of fruit, delicate florals, and a silky body, delivering an intricate and memorable coffee experience that reflects Elkin Guzman’s dedication to pushing the boundaries of coffee processing.
