This vibrant release in our Paradise Series comes from a group of producers in San Agustín, a high-altitude community in southern Huila celebrated for its coffee excellence and rich cultural heritage. Grown at 1,750 meters and crafted from Pink Bourbon cherries, this coffee undergoes a playful and precise co-fermentation process that creates a cup both nostalgic and delightfully new.
After a 48-hour pre-ferment, the coffee is inoculated with ground banana and fermented for five days in its own mucilage. This honey + banana co-ferment enhances sweetness, creaminess, and complexity—bringing out notes of banana bread, spice cake, and a silky milk chocolate finish. The result is a beautifully rounded, dessert-like cup with layers of nuance and joy.
Processed across multiple small farms with support from San Agustín Coffee Producers, this coffee reflects both community and innovation. It’s a standout in every way.
