Produced by third-generation coffee farmer and agronomist Jermy Pedraza, this coffee comes from Finca La Joya in the mountains of Nariño, Colombia, where elevations reach nearly 2,000 meters above sea level. Jermy's scientific approach to farming is paired with generations of family experience, resulting in coffees that are expressive, balanced, and unmistakably unique.
After harvest, only perfectly ripe cherries are selected before undergoing a carefully controlled anaerobic fermentation and slow drying process designed to build sweetness, complexity, and clarity.
The result is a coffee that opens with ripe red fruit and ruby grapefruit before settling into a pleasantly structured, wine-like finish. Vibrant without becoming overwhelming, it's the kind of coffee that keeps revealing something new as it cools.
